Loomi is one of the few ingredients where the processing is the product. A fresh lime is tart and bright. Dried slowly through Egypt’s summer heat until the interior blackens, it becomes something else entirely — deeply sour, faintly fermented, smoky, with the musky complexity that anchors Gulf and Iraqi cooking. There is no substitute and no shortcut.
The two grades we produce come from the same fruit taken to different endpoints, and they serve genuinely different buyers. Our family has dealt in dried citrus in Fayoum and the Delta since 1960.

Choose the form that best matches your processing requirements:
Whole Black Limes (loomi / noomi basra) — fully oxidised through dual-stage drying. Hard, dark brown to black shell, hollow interior, intensely sour with fermented and smoky notes. The grade for kabsa, machboos, Iraqi and Persian stews, and Gulf spice blends. Sold as black lime spice when ground.
Whole Yellow Limes / Lemons (sun dried) — single-stage solar dried, retaining a mustard-yellow to light brown shell. Cleaner, brighter, straightforwardly tart without the fermented depth. Preferred for tea and citrus infusions, and where a lighter colour is wanted in the finished product.
Ground (powder) — either grade milled to your mesh specification. Ground loomi loses aroma faster than whole, so we mill close to dispatch rather than holding stock.
How the black grade is produced: solar drying to set the shell and begin the internal colour change, then controlled oven dehydration to drive the interior to full black oxidation consistently, then a final solar finish to stabilise the fruit for storage. Skipping either stage is what produces the inconsistent, mouldy, or under-oxidised product that turns up on the spot market.

Storage Conditions: Store in a cool, dry environment below 25°C, protected from direct sunlight, humidity, and pests. Whole dried citrus is more vulnerable to insect activity than milled product, so fumigation and sealed storage matter.

Q2. Is Loomi the same as dried yellow lemon? No. Loomi is a common name mainly used for dried black lemon. Dried yellow lemon is a different product, typically sun-dried while retaining its yellow colour. Both are made from Citrus limon but differ in appearance, flavour, and processing.
Q3. What is the difference between black limes and sun dried limes? The main difference is the drying process and final characteristics. Egyptian dried black lemon is first sun-dried and then oven-dried until it develops its dark colour, concentrated sour flavour, and distinctive aroma. Sun-dried yellow lemon is dried naturally under the sun while retaining its yellow colour and a lighter, cleaner sour flavour.
Q4. Should I order whole or ground? Whole loomi is pierced and simmered in the dish, then removed — the standard for stews and rice. Ground is used in dry spice blends and industrial seasoning. Ground loses aroma much faster, so we mill close to dispatch.
